The multicultural kitchen team at the Italian restaurant FIRENZE is led by the incredibly talented, widely loved, and highly respected head chef, Robertas Žiogas.

The Italian menu was developed in collaboration with Mickey Bhoite – a professional chef and expert in Italian gastronomy, who spent most of his life in Tuscany.

WHAT DOES THE CHEF THINK ABOUT THE WORK IN FIRENZE AND ITALIAN CUISINE IN GENERAL?

Italian cuisine fascinates with its authenticity and purity.

It doesn’t rely on complicated techniques, yet when it comes to flavor, it stands among the world’s top culinary traditions. I dedicate a great deal of time to tasting and testing ingredients before selecting them – only then begins the precise process of crafting each dish, in search of that perfect balance.

Thanks to FIRENZE’s strong team and our guests’ enthusiasm, I believe we’re able to create an experience that leaves a lasting impression. The greatest reward? Seeing happiness on our guests’ faces,” shares Robertas.

Robertas Žiogas has previously worked at acclaimed restaurants such as IDW Esperanza and Renesansas. He also collaborated closely with a celebrated Mexican chef, bringing his expertise to the gastronomic experience at La Capital restaurant.

A fun fact: for the past 10 years, Robertas has been the go-to chef for major film and advertising productions in Lithuania. “I cooked for the cast and crew of Chernobyl, Stranger Things, and War and Peace. I’ve had the chance to feed stars like John Malkovich, Winona Ryder, Gillian Anderson, Helen Mirren, and many others,” the FIRENZE chef recalls.

The Italian dishes at FIRENZE were developed in collaboration with Mickey Bhoite – a culinary consultant and chef with deep roots in Tuscany. Mickey began his career in this very region, and today, his portfolio spans 17 countries across the globe.

His signature style? Presenting Tuscan cuisine at its most refined and elevated level of quality.
